Lemongrass Chicken Meatballs

This recipe went through a long and honestly absurd number of iterations before it settled here — egg whites or panko, three pounds or five, fish sauce recalibrated every time the batch size changed, a long debate about whether to use lemongrass paste or fresh, a side-quest into whether bottled lime juice could stand in for fresh. What follows is the version that actually worked, twice: once with supermarket ground chicken for a potluck of twenty, and once with hand-minced thighs for a quieter Thursday night.
The two versions taste similar but behave differently, so they get slightly different treatments. With ground chicken, the meat is already smooth and cohesive, so the aromatics go into a blender to make a vivid green paste that folds through without fighting the texture. With hand-minced thighs, the meat itself has character — irregular pieces, little pockets of fat — so the aromatics are left finely minced, to sit alongside the thigh texture rather than smooth it out. - 2 ½ stalks lemongrass — tender inner core only, sliced
- 3 cloves garlic
- 2 shallots — ~45 g each
- ¼ medium yellow onion
- 1 tsp fresh ginger — finely grated
- 2 bird’s-eye chilies — whole, with seeds
- 2 tbsp cilantro stems — finely minced
- ¾ tsp lime zest — or ½ tsp lemon zest
- 2 bird’s-eye chilies — de-seeded, finely chopped

Blend the aromatic paste
Combine the sliced lemongrass, garlic, shallots, onion, ginger, whole chilies (with seeds), cilantro stems, and zest in a blender or small food processor. Blend to a smooth, vivid-green paste — scrape down the sides and give it another pulse if there are any tough lemongrass threads left.
Tip · Slice the lemongrass thinly before it hits the blade. Otherwise the fibres can jam the blender and the paste stays stringy. -
Mix base
In a large bowl, combine the ground chicken, the aromatic paste, and the chopped de-seeded chilies. Fold gently with a spatula or your hand until the paste is evenly distributed — don’t knead it.

Season
Add the fish sauce, soy sauce, sugar or honey, pepper, oil, and the tamarind paste if you’re using it. Fold gently, just until everything’s distributed.

Bind
Add the egg white and cornstarch. Mix only until the mixture becomes slightly tacky and holds together when squeezed. Stop early — overworking ground chicken gives you dense, rubbery meatballs.
Tip · Ground chicken already wants to bind. The cornstarch and egg white are insurance, not structure. This is why the binder ratio is less generous than in the thighs version. -
Rest
Cover and refrigerate for 10 minutes — long enough for the cornstarch to hydrate and the seasoning to even out, short enough that the mix doesn’t tighten.

Pan-test
Cook a teaspoon-sized patty in a small pan until just done. Taste. If it reads slightly salty, add 1 tbsp cold water to the mix, fold gently, and retest. If it reads flat, add ½ tbsp more fish sauce. This is the single most useful step in the whole recipe — don’t skip it.

Shape and bake
Lightly oil your hands and roll the mixture into 1 to 1¼-inch meatballs (appetizer size; go a touch bigger for mains). Arrange on a parchment-lined baking sheet. Bake at 425°F / 220°C for 13–15 minutes, until cooked through and lightly coloured. If you want more colour on top, broil for 1 minute at the very end — watch them like a hawk.
A bright, cooling counterpoint — keeps the salt in check and echoes the aromatics in the meatballs. Whisk it together while they rest.
