Choco Chip Oatmeal Cookies
Thick, chewy oatmeal cookies packed with chocolate chips, walnuts, and a pinch of cinnamon. The dough rests in the fridge before baking — it firms up and makes all the difference to the texture. Makes 36.

1¾ cups flour -
1 tsp baking soda -
1 tsp salt -
pinch of cinnamon -
1 cup softened butter -
1 cup brown sugar -
½ cup white sugar -
2 eggs -
2 tsp vanilla -
3 cups quick oats -
1 cup chopped walnuts -
1 cup semisweet chocolate chips
Method

In a large bowl, cream the butter with both sugars until smooth. Beat in one egg at a time, then stir in the vanilla.

Combine the flour, baking soda, salt, and cinnamon. Stir into the cream mixture until just blended.

Mix in the oats, walnuts, and chocolate chips.

Drop by rounded balls onto a baking sheet. Refrigerate for 30–60 minutes.

Bake at 325°F (160°C) for 10–12 minutes. Cool on the tray before transferring.
