“Beef” Shiitake & Broccoli
A plant-forward take on beef and broccoli — meaty shiitake mushrooms standing in for the beef, with vibrant broccoli florets and a ginger-maple soy sauce that comes together in under 2 minutes. Serve over steamed rice with green onion and sriracha.

8–10 shiitake mushrooms, thinly sliced -
1 head broccoli, cut into florets -
1 tbsp oil
Sauce

1 tbsp oil -
1 tbsp cornstarch -
½ cup soy sauce -
3 tbsp maple syrup -
1 tbsp minced garlic -
1 tsp minced ginger
To serve

green onions, sliced -
sriracha
Method

Heat 1 tbsp oil in a large skillet over medium heat. Add the shiitake mushrooms and cook until slightly browned.

Steam the broccoli until bright green, about 3–4 minutes. Rinse with cold water to stop the cooking process.

Combine all the sauce ingredients in a small bowl and set aside.

Add the steamed broccoli to the mushrooms. Pour over the sauce and stir constantly for 1–2 minutes until thickened and glossy.

Serve over rice with sliced green onion and sriracha.
